As for the Cambodian crickets, I have to say they were one of the most delicious dishes I tasted.
The crickets were a refreshing break from the constant fish sauce and prahok (a gray and foul-smelling fermented fish paste) used in almost every meal.
As a true Southern girl from North Carolina, I felt a tiny bit at home with the crickets. They tasted very much like fried okra.
